Chicken and broccoli piccata recipe


Chicken and broccoli piccata recipe

Chicken breast 1.3 lbs - cut thin and put salt and pepper
broccoli - about 1 branch - lightly boiled

Sauce - Mix those ingredients
Eggs - 2
Flour - 4 table spoon
Miso - 1 table spoon
Dried Oregano or favorite herb - 1/2 tea spoon or more

1)Heat flying pan with 1 table spoon salad oil. sauté chicken lightly.
2)put broccoli and cooked checkin into the egg sauce.
3)After clean up flying pan, heat 1 table spoon of butter and put 2) into the pan. cook both sides until egg sauce is cooked.

I found this recipe from Japanese magazine called ""ESSE" Jan 2014.

Chicken breast tends to be dry. The magazine says this recipe doesn't let chicken dry up. In the U.S. people seem like prefer breast chicken than dark chicken. I guess in Asia it's opposite. I was looking for more recipe that cooks breast meat nicely and it was a success.

I have never made piccata but heard of it. I guess it's Italian recipe, but I guess this is Japanese version.

Yummy! Chocolate Chip Cookies Recipe


I baked chocolate chip cookies yesterday. I found this recipe from Japanese recipe submission website called cookpad. This recipe is so easy and good. Chocolate chip cookies

In English..

a) All purpose flour : 140 grams
    Baking powder : 1 tea spoon
    non sugar added cocoa powder : 1 tea spoon
mix those above ingredients (a) in a bowl

b) Room temperature Butter : 70 grams
    Sugar  : 70 grams
    egg : 1

c) chocolate chip : 100 grams
 
Mix  those above ingredients (b) in a bowl and then shift in (a) to (b) then mix in chocolate chip (c)

Put 1 table spoonful to the cookie sheet, bake at 325 F for 12 minutes, then lower the temperature to 300 F and bake another 15 minutes.

Wait til cool down a bit and enjoy!

Mille-feuille cutlet with vegetable stir fry




What are you gonna eat tonight? I ate Port cutlet with vegetable stir fry and brown rice.

I tried a new recipe from Japanese TV because it looked easy and delicious.  I used frozen thin sliced pork. Paste mixture of beaten egg, flour, salt and pepper on the meat and coat with bread crumbs like this.



and cooked with 50cc of vegetable oil. The TV recipe says needs to cook only for 5 minutes but it took nearly 30 minutes! This is called mille-feuille cutlet. I guess thin layers looks like mille-feuille pie.



Nice. But I wonder it will be enough for 2 adults and 2 kids..

I thinly cut carrot, asparagus and garlic.


pour some stir fry sauce from Trader Joes.. Sour and sweet.

With yesterday's left over brown rice and hand made kimchee by Korean neighbor. It was a nice dinner again.

Yesterday's dinner Omelet Rice & Miso Soup

This day's dinner was Omellette Rice. (O mu le tsu in Japanese)


Under thin egg layer, there's fried rice.


I made with asparagus, green onion and sausage (nitrate free.) I used brown rice.



My husband doesn't like rice, especially brown one. I had to make potato omelet with cheese. The pic above is before I flip the omelet.




With Japanese probiotic soup, miso soup. Bon appetit!!
I use PTFE and PFOA FREE non stick frying pan.

Aloe Vera juice for Acid Reflex

My husband has acid reflex though he has mild one so that he doesn't have to take medicine. He would feel his stomach doesn't feel right after eating certain food like oatmeal, bagel and steak. Because it only happens sometimes, he didn't bother to go see a doctor and  didn't even know what it was until when he had choking sensation while he had dinner with his friends. He felt his food doesn't go down to the stomach and just stuck in the middle of the road then bubble started coming out from his mouth. after he spit out the form he felt better.

His friend saw him and said. "You have acid reflex!"

You see a lots of commercial on TV for medicine for acid reflex like Tums, Zantac, Prirosec.. Seems like a lot of Americans suffer from this condition. Coming from Japan I would get heartburn just seeing those greasy burgers on commercials.

My husband knows a friend who also suffered from acid reflex worse than his and he feels much better after taking aloe vera juice everyday. My husband started taking this George's Aloe Vera Aloe Vera Liquid about 1.75 fl oz (about 50 ml) once or twice a day, once in the morning and sometimes at night too, and his acid reflex got much better and doesn't happen after eating oatmeal or bagel anymore!

how I use my iPhone

I have been using iPhone (3!) since summer of 2011. I don't have an expensive media plan so I use wifi at my house or wherever free wifi is available.

I use the camera & video a lot. It's so nice that you can take pictures  & videos of my kids and send e-mail to grandpa and grandma.

One of the things I do with my phone is keeping track of dinner using notes. I cook almost every day.  It's nice to write down that info so that I don't cook the same thing twice in a week and it's  good brain training.

Soon I will be eligible for the new phone.  I can't wait to get iPhone 4 or 5!

I bought a new vacuum and it works great!

We had a 5 year old vacuum cleaner but it didn't clean very well. On new years day, my husband tried to fix it and totally broke it. We needed a new one. I always wanted a Dyson vacuum cleaner but thats way beyond our budget (usually over $400.) On one Sunday at Macy's, we saw a Bissell vacuum and my husband says this is the same vacuum as the one he  sometimes uses at work and it works great and easy to toss the dust and clean the filter. I thought it does looks similar to Dyson. I wanted a small canister style but if vacuum works great, why not? The price was $109.

On the Friday morning, I was browsing newspaper (we only subscribe Thurs to Sun) I saw a Macy's morning sale ad and the sale was between 9:00 AM to 1:00 PM on Fri and Sat only. I had a cold and I totally lost my voice on that day, but I determined to get one and I did with my 18 month girl! The vacuum was heavy and my girl was being good girl. I could park nice spot. I don't think I could park this good spot on the Saturday. I got the vacuum with tax, $98.00 I am so glad that I saved $20 from one week ago.

I didn't use it until my husband got home because I was kind of feeling ill, but I couldn't believe how much dust this vacuum got after just one time use. The dust filled up almost half of the dust container! Ewww. We were living among the dust? No wonder my asthma was bad!

In Feng Shui, it is very important to clean your house. I hope my luck will be better this year.
